Chipotle and other Giants Join the Fast Casual Pizza Game

Once Fast Casual Giant Chipotle bought into the Pizza Local Fast Casual Pizza concept many foodies took notice, then came Wetzel Pretsel's with Blaze and Sparro's with it's new concept called Cuchinova and the floodgates for many franchise holding groups were open. They began looking for new concepts and started creating new concepts such as Revolve with namesake revolving brick ovens from New York Brick Oven Company pumping out brick oven pizza faster than can be assembled. What is the attraction? Why is Fast Casual Pizza Exploding across the US? What defines the category and who are the real players behind it. Well the pizza segment has always had it's share of the market with giants such as Pizza Hut and Domino's still dominating but what the attraction is, especially for millennials, is that it's fast, hot and fresh in a trendy atmosphere at reasonable cost. New York Pizza School, Revolving Brick Ovens and Gourmet Pizza

         
       
The country is undergoing a pizza revolution which was created in New York by the original pizza kings such as Tortono’s Pizza in Coney Island Brooklyn where when the owner Jerry died in 1994 the New York papers proclaimed “The King of Pizza is dead”.  A huge acknowledgment for the man whose family helped put another New York mainstay-Lombardi’s Pizza on the map. Lombardi’s was the first licensed pizza place in America dating back to the 1905 on Mulberry street New York.  Patsy’s up in Harlem which came on the scene early in the 1930’s and is another famous New York brick oven pizzeria and like Lombardi’s and Tortono’s also featured handmade, hand tossed, fresh mozzarella and fresh homemade sauce cooked in a coal burning brick oven like the ones many bakeries have been using for thousands of years to bake bread. 

Then in the early 90’s a couple of young upstarts from Brooklyn who had been fans of New York’s finest pizza places decided to open the first wood burning brick oven pizza place on the forgotten borough of Staten Island then Brooklyn New York but along with the standard Margarita pizza that the other famous pizza places were doing, they took it up a notch and created a line of unique and truly “gourmet” pizzas such as the original Vodka Pie and the Mushroom Madness made with the relatively, unknown at the time, porcini mushroom. They called their place Goodfella’s Brick Oven Pizza and soon became pizza celebrities featured in all the local media and then international media after winning the World’s Best Pizza contest at Pizza Expo. Now not to be New York biased it would be rude to leave out the left hand coast and the incredible success of California Pizza Kitchen who took the brick oven idea and put the California twist on it with such great pizzas like the BBQ Chicken, Tai and Jamaican Jerk Chicken then built the concept to international status. With the advent of cooking shows and the fantastic popularity of gourmet foods, social media, 24 hour a day television and the increase of public awareness regarding fresh food, the organic craze, celebrity chefs and a demand for new and exciting dining experiences, the stage was set for the current Fast Casual Pizza Trend. The Fast Casual Pizza trend is the right thing at the right time and fills a need for a premium gourmet food item that is both fast and easy to transport without diminishing the flavor and eating experience. Today's consumers, mostly millennials, are looking for a better product in a trendy environment that fits their budget. So the pizza race begins.

Chipotle, the fast casual giant, is currently developing its pizza chain model called Pizza Local and has many industry experts eagerly standing by to see how it evolves with its revolving brick oven for speed and consistency for its fresh made dough. Pizza Expo 2015 Las Vegas

For pizza men, pizza fans and pizza eaters from around the world March is an exciting time because the International Pizza Exposition takes place at this time every year. It is a gathering of pizza men, manufacturers, designers, chefs, entrepreneurs, promoters, experts, novices and a host of others dedicated to making pizza. Having recently visited the extremely well executed Radius Brew Pub in Emporia Kansas featuring wood fired brick oven pizza from a revolving  brick oven that is part of a wonderful open kitchen design, I realize a new player/category is emerging -The Gourmet Pizza Brew Pub. To begin, select craft beers such as Watermelon Wheat and Milk Stout are being brewed for customers in one of the nation’s first completely visible and walk around electric micro-breweries as the Chess Masters Blues tunes set rhythm to  the mood. A unique sampling of six delightful ales and  stouts arrives at the table in a signature hand-made split level server( which takes up less room while making for a wonderful display) is brought to the table with each of its individual glasses glistening with cold condensation to start. Details, details, details, a pleasant Midwestern staff and a completely unexpected menu are a welcome surprise to see in this small town on the prairie but when the Scotch eggs with homemade Dijon mustard and butter washed Pretzel bread featuring a homemade cream cheese and Cheddar spread arrived, I was sold. Then the Mako Shark with adobe spiced French potatoes was placed in front of me I had visions of my home town- New York, this was a piece of paradise or an oasis on the Great Plains (pinch me). As if all this was not enough for this kid from Brooklyn, the next dish was a broccoli pancetta pizza delight cooked in a revolving wood burning brick oven built by the New York Brick Oven Company.  I had to hold back the tears.  Radius brew pub has raised the proverbial bar on pizza and set a new standard for brew pubs while homing in on a new food trendsetting idea.   This long time restaurateur   feels Gourmet Pizza Brew Pubs will be of the importance and demand attention on par with the fast casual trend for quick eating. The latest weapon in the Pizza Wars of New York was revealed by the 2x World Champion Goodfella's Brick Oven Pizza of Staten Island New York. 2014 Tips for Success -New Years Resolutions


Each year millions of people start the year with resolutions and a great many of us are quite sincere when we make them, so what happens that we don't keep them or start off strong and quit. Usually the target is unreal, meaning the person making it doesn't have the tools, information or ability to keep it. Secondly many of us charge in with fantastic enthusiasm only to hit a wall and fail.
 How do you overcome this? 

My suggestion is make smaller incremental goals toward your overall goals. Some  examples could be hiring new staff, losing 25 lbs. or writing a book. Well the first one could be overwhelming if you just fire all the dead wood and have to handle your whole business by yourself so maybe it would be a little easier to sit down and decide who needs to be replaced as a first DOABLE step. Look at overall performance and decide on one person you want to retrain(yes that is a possibility and always a first choice at Goodfella's Brick Oven Pizza) or replace, then work out a plan to do that and have a win doing so. Losing weight is a killer for most because it is a slow process and requires patients and will power. Well what if you set the goal for 1 lb. in three days  and then figure out exactly what you have to eliminate from your diet or where you could reduce portions to attain the goal? Once you have made the 1 lb. goal you set your sights on 2 lbs. and so forth winning as you go. Writing a book is another big target and having wrote  Routine Patrol I found that years went by until my friend Dan suggested I just write what comes to mind and complete one idea or chapter. This was much easier to do and led to next and so on until I had enough material  to start arranging, editing and putting it together. The small win of seeing the first chapter completed was the inspiration needed to continue. You can take this idea and apply it to any goal or project you can imagine. the key is attainable targets that lead toward your goal. Yes there will be obstacles and set back but just re-evaluate and start fresh. I wish you great health, prosperity and success in this New Year! Best wishes. Start!!!

Andrew Scudera International Pizza Expo Champion and great guy!

I have known Andy for 19 years and watched him go from bus boy to driver to chef to pizza-man to manager to co-owner of the Original Goodfella's Pizza on Staten Island to International Pizza Expo World Champion. What amazes me most about this man is his incredible grace under fire and ability to get the job done no matter the circumstance. In an age where the role models in this country are more and more degraded and self absorbed it is becoming rare to find men of integrity who care about others and being a team player. Perhaps it is his wonderful close-knit family or the fact that he, his brother and their dad are all Eagle Scouts but whatever it is he is a man you count on and one that takes great pride in work. Presidential Pizza

From Staten Island NY to the Presidential Yacht to prepare dinner, wow! Looking back at some of the places and people we have cooked pizza for and delivered to it seems pretty amazing. From jumping in to help cook at Gracie Mansion during an event for Mayor Giuliani, delivering a Vodka pizza to President Bush at the republican convention, delivering pizza's to the Yankees at Yankee Stadium, Tom Cruise, Z100,  having Govenor Pataki cooking in our oven, rescue workers, children and all our friends this has been wild. How to make the best pizza

Simple as it may sound, you have to use the best ingredients. That is why Poppa John' s was so successful and they only used "better" ingredients not the best. Brick Ovens For Sale

Having owned and operated many brick oven restaurants over the years and experienced what is like to build and work brick ovens I can say with certainty " don't take advice about cooking pizza from a company that never cooked pizza". That may sound obvious but you would be surprised at the horror stories. The joy of pizza!


Where do I begin? Taste, flavor ingredients, dough, prepping, or baking methods? Having been in the pizza business for over 20 years I have a lot to draw on here but it always comes down to my favorite part of the business, the people. I have been extremely fortunate in the pizza world but I realize it is like Thomas Edison said that genius is disguised as hard work, and working hard 7 days a week for years does pay off, if you survive. We started Goodfellas Brick Oven Pizza   www.goodfellas.com back in 1993 after my brother and I quit our jobs and went "all in". Serving our customers, hearing their stories and becoming part of their lives over the years is what made it worthwhile for me. From engagements to weddings and births to the first days of school, baseball, communions, graduations, and birthdays, wow! It's like having a gigantic family and the pleasure of sharing all the fun. Yes, there were times of heartbreak too such as 911 and Hurricane Sandy but I remember a customer saying this in the days after the attacks on our country " I'm disgusted and in a daze but I always stop here on my way home because you guys always make me smile and feel better".  What is that worth?
