Everybody Knows Cooking on a Stone Hearth is the Only way to Make Great Pizza

Yes that is so true that even conventional metal ovens have a "brick lining". Imagine if you could have a brick oven with a revolving stone hearth? Well you can. Pizza-a Neighborhood Institution

On the way from the church to the reception, a young couple "had to stop for pie"at Goodfella's Pizza Staten Island.
Growing up in Brooklyn there was a pizza place in every neighborhood, and it seemed like every other block had one.  Our local pizza man's name was Frank. Frank was there all through my childhood and teens and I just took it for granted, like he was part of the scenery. Pizza has always been part of my life, from celebrating little occasions to first dates and quick slices. Any pizza is better than no pizza. When I run into Old timers and talk pizza I get a little nostalgic, especially when I try a place far from the old neighborhood and get a pleasant surprise of an authentic Brooklyn style pie. I had just such an experience the other night when I met Lou of Keyport Pizza and found out he learned his craft as an apprentice, and has been true to the recipe for over 30 years.

We talked of the good old days and "banging out" 500 pies in a night and how these young kids are in awe to this day when Lou takes over during a rush and spreads that dough at a mind boggling pace. As most place are doing now he asked me about Brick Ovens and what is involved in switching over to one to keep up with changing tastes. Although I have been in the brick oven game for decades and swear by them I still love that occasional Old School Slice of New York Style Pizza, Brooklyn Style to be specific.

SAY NO TO DRUGS, YES TO PIZZA AND GET BUSY!

This simple statement made me think of my past 20 years in the pizza industry and an observation I have made after seeing hundreds of employees come and go. Kids that are genuinely busy and engaged in attainable goals are not the ones using drugs. It is the ones that are not winning, not involved the game of life with no purpose or direction that get into drugs and the attending trouble. This is especially prone to occur when their "friends" are of the same ilk. There is always someone in the crowd who thinks it's cool to smoke weed and thinks nothing of the people he or she encourages to join him in using drugs as a way of combating what I have seen over and over as  pain, upset and lack of direction. When you say "hey that is not cool" you set the tone and make it known to all how you stand and maybe the example you just set will prevent another from going down that road.

When I see kids allowed to work, create and participate I see successful kids. When I see the ones who are coddled, given everything, not allowed to contribute, work, or participate, I see trouble coming. At Goodfella's Pizza in Staten Island I witnessed this over and over through the years. The kids thet enjoyed working and playing made something out of their lives while the ones always trying to "get over" get away with doing as little as possible, end up cheating themselves in the end. Drugs, crime, welfare, dependency always follow the "do nothings". In the police department we called them "empty suits"-guys just there to collect a check and never lift a finger to help anyone but themselves. I know you've seen similar things so encourage people especially kids to help, to work, find a hobby or a sport. They don't have to be good at it but they need to be encouraged to JUST DO IT because in this life that is the big difference between happiness and misery.

The latest figure for pizza consumption in America is an amazing 350 slices per second! The average family eats pizza at least once a month and for many it's once a week. That is a lot of pizza. With pizza sales for 2012 at $36,000,000,000 we are talking a lot of dough. With many established chains adding pizza to the line up along with stadiums, bars and convenience stores it's no wonder pizza is one of the top foods in America. Now if your in the industry or considering joining the craze you may want to look at fast casual brick oven pizza since this is where it is all heading now. It seems the best dressed girls are now lining up for pizza! Yes as the old saying goes " the way to man's heart is through his stomach" is now being taken to new levels. Maybe a pizza scented perfume is not that far off. One of my favorite dates was when my girl showed up at the door with a suasage and mushroom pie but maybe I'm a little predjudice having been in the pizza industryfor many years. Honestly though you can't go wrong on a first date with a fantastic pizza from a local place and if you girls are thinking about winning over a man why not ask him out yourself, even if you end up getting stuck with the bill in this politically correct era it shouldn't be too bad. For those of you lucky enough to be in the New York area you may want to check out the 3 time international pizza champs at Goodfella's In staten island afeter a romantic ride on the Staten Island Ferry and a great view of Lower Manhattan and the Statue of Liberty. Lady Ga Ga pizza


From the NY Yankee Good luck pizza and the World Famous Vodka Pie to  the lady Ga Ga Pizza, the boys at the Original Goodfella's  Brick Oven Pizza on Hylan Blvd. in Staten Island NY are always having  fun making delicious and sometimes entertaining pizzas like the Lin Sanity pie.  The incredible smell of the revolving wood burning brick oven and the fresh homade ingredients take you away to mom's kitchen and memories of the first time you smelled a genuine fireplace as a kid. An always genuinely happy to see you staff that values people and has given back to community in so may ways over the past decades makes you feel right at home so come on down and taste some of NY's Finest(one of the founders is a former New York City Police Officer). Well I might as well start off with the  proven number one, these guys have consistently for  the past 25 years or so won titles such as the best pizza in NY- AOL contest,  Best Pizza in the East US, Best Pizza in America and the coveted World's Best Pizza several times. What does it take to have your pizza bet(by the Mayors of NY) on the NY Yankees, NY Mets and even the Superbowl winning NY Giants? It takes a fantastic pizza,  a lot of credibility and a BIG fan base. Revolving Deck Pizza Oven Trentino Italy

While visiting wine country in In Trento Italy we were invited to v a local pizza man named Alberto at his place called Albert's. We pull into this small city and are amazed at the architecture with its wonderful old buildings painted in  delightful colors such as Tuscany Yellow, reds and greens. More amazing is the mountain waterfall directly behind his elegant yet comfortable restaurant. We are greeted with smiles,  warm hugs and the familiar "2 cheek kisses" by an impeccably dressed young man in his Italian flag colored chef hat. The efficient style and high tech order of his place is enhanced by his own sharp appearance and as soon as he knows we are Pizza men from NYC the hospitality begins! We are sat at a well set table and notice something immediately-no condiments. That's right, no salt, pepper, oregano, grated cheese or the like because each pizza is complete with its own special flavor and seasoning. We are informed that all the ingredients are freshly prepared and are made locally from the Parmesan cheese, buffalo mozzarella, olive oil and smoked prosciutto to wine and beer he will be serving. It doesn't get much better for 2 Italian boys from Brooklyn. Alberto gets busy as we watch the well choreographed pizza making begin. The dough is opened  by hand then his homemade sauce is spread  with a ladle covering the pizza lightly. Next comes the fresh mozzarella grated for even cooking and into the revolving deck brick oven ( available from New York Brick Oven Company). The pizza rotates for a minute or 2 and then is brought to the slicing machine where smoked prosciutto  is sliced and placed fresh on the cooked pizza along with thinly sliced squash and other tasty treats. Alberto serves us himself and stands by proudly as we taste his creation. Unbelievable! Magnificent! We are all smiles and off again he goes to prepare more and more pizzas for us to try. This goes on until we can't eat anymore which is saying allot. But we have to have coffee and desert which is espresso and homemade raspberry and vanilla puddings-wow!! As we told Albert " your pizza and hospitality were overwhelming, you and your family always have a place to eat in America at Goodfella's on Hylan blvd. Staten Island NY.
