New York Pizza School, Revolving Brick Ovens and Gourmet Pizza

         
       
The country is undergoing a pizza revolution which was created in New York by the original pizza kings such as Tortono’s Pizza in Coney Island Brooklyn where when the owner Jerry died in 1994 the New York papers proclaimed “The King of Pizza is dead”.  A huge acknowledgment for the man whose family helped put another New York mainstay-Lombardi’s Pizza on the map. Lombardi’s was the first licensed pizza place in America dating back to the 1905 on Mulberry street New York.  Patsy’s up in Harlem which came on the scene early in the 1930’s and is another famous New York brick oven pizzeria and like Lombardi’s and Tortono’s also featured handmade, hand tossed, fresh mozzarella and fresh homemade sauce cooked in a coal burning brick oven like the ones many bakeries have been using for thousands of years to bake bread. 

Then in the early 90’s a couple of young upstarts from Brooklyn who had been fans of New York’s finest pizza places decided to open the first wood burning brick oven pizza place on the forgotten borough of Staten Island then Brooklyn New York but along with the standard Margarita pizza that the other famous pizza places were doing, they took it up a notch and created a line of unique and truly “gourmet” pizzas such as the original Vodka Pie and the Mushroom Madness made with the relatively, unknown at the time, porcini mushroom. They called their place Goodfella’s Brick Oven Pizza and soon became pizza celebrities featured in all the local media and then international media after winning the World’s Best Pizza contest at Pizza Expo. Now not to be New York biased it would be rude to leave out the left hand coast and the incredible success of California Pizza Kitchen who took the brick oven idea and put the California twist on it with such great pizzas like the BBQ Chicken, Tai and Jamaican Jerk Chicken then built the concept to international status. With the advent of cooking shows and the fantastic popularity of gourmet foods, social media, 24 hour a day television and the increase of public awareness regarding fresh food, the organic craze, celebrity chefs and a demand for new and exciting dining experiences, the stage was set for the current Fast Casual Pizza Trend. The Fast Casual Pizza trend is the right thing at the right time and fills a need for a premium gourmet food item that is both fast and easy to transport without diminishing the flavor and eating experience. Today's consumers, mostly millennials, are looking for a better product in a trendy environment that fits their budget. So the pizza race begins.

Chipotle, the fast casual giant, is currently developing its pizza chain model called Pizza Local and has many industry experts eagerly standing by to see how it evolves with its revolving brick oven for speed and consistency for its fresh made dough. Some other up and coming names to watch out for that are also using the revolvingbrick ovens are Revolve, Spin Neapolitan, Pie Craft and The Pies the Limit. The other big player behind the scene in this game is the Pizza School of New York which has been setting industry standards by training students in an actual restaurant on the latest revolving brick ovens for a real time hands on experience thereby creating many successful operators and local pizza sensations when the students enter the fray with new found skills. How to Promote your Pizza Business by Marc Cosentino Co-Founder of Three Time World Champion Goodfella’s Brick Oven Pizza Part 1



Watching my facebook friend Grant Cardone go on and on about getting known and attracting attention I thought I might as well share some very hard won knowledge on the subject to help my friends just getting started. I’d like to first say that IT IS SO MUCH EASIER TODAY THAN IT HAS EVER BEEN TO GET ATTENTION FOR BUSINESS!!! What do I mean by this? The internet, cell phones, home printing, email, blogs, online ordering, electronic press releases, computers, you tube, facebook, insatgram, search engines and a host of other items that make it so easy to get out there that it may seem overwhelming or too easy.
No matter how incredible your product is, if nobody knows it exists, you will never sell one item and die broke a complete failure. What you need besides a great product is getting it known. I have some experience in this having generated hundreds of newspaper articles, TV news stories, hundreds upon hundreds of pages on ggogle search, lead google stories, 100′s of thousands of hits on youtube videos, twenty years of NYC Mayors visiting my original store, having my pizza bet on the NY Giants by the Mayor of New York when They won the Superbowl, radio and I think you get the point.
SO how did I do it? More importantly; how do you do it? If you do a portion of what I advise you here I guarantee you will succeed in getting your product known. With good management and a consistent product you should start expanding.
1-list out all the people you know and every group, organization and social club you belong to. Note: Yes, work and a burning desire to succeed are a necessity so no crying!
Believe it or not but the people most likely to promote you are the ones you already know so start contacting them and letting them know what you are doing and don’t be afraid to ask for help getting the word out because most-not all-people are good. Email. call, visit, write letters, make post cards, put up signs and contact each and everyone of them. Invite them to your grand opening and tell them to bring their friends. Yes I said it and if you thought for one second “Oh my god how would I ever handle that many people” you need to rethink your promotional philosophy and heres why. A true promoter never stops and never, ever considers delivery, just getting the people in-period. I don’t care how you do it and you don’t care about handling them, that’s another part of the job called production or delivery. Your only concern when you wear the promotional hat is promoting. What is promoting? It’s making things known and well thought of. It’s getting the word out and creating interest.
2-Signs announcing your product. Let’s take pizza

since it is why we are here. You need to tell people you are coming and get your name on everyone’s tongue. Signs on your place, signs on your car, signs on your clothes, on your dog, kids. hats, cards.
3-Everywhere you go, shopping, barber, car wash, doctor, school. little league, diner, dog groomer you talk it up and introduce yourself and give out cards or better yet coupons for everyone.
4-When you open you go and hand out samples to all these people-don’t worry about the cost because it will have a return on investment way over what any paid advertising def: paid offers of your product in various media. WORD OF MOUTH is always your best promotion and will always bring greater results than paid ads.
5-video on your iPhone all of the above and dump it on your new youtube channel, facebook, instagram, twitter accounts your opening in the next step
6-open twitter, youtube, facebook, instagram, linked in and every other social media account you can find. And continually put up photos and videos of your progress and promotion.

If you are in the pizza industry, you have probably heard of Pizza Expo by now. It is the Super Bowl of the pizza world with close to 10,000 people from across the world attending Pizza Expo at the Las Vegas Convention Center on March 25th-27th.

 Anything involved in the business of  making pizza , delivering or selling pizza is represented here. The atmosphere is electric with characters from all parts of the US and the world involved in  buying, selling, lecturing, competing and most importantly-eating pizza. Representatives from all the major pizza equipment dealer such as Stanilsaus Tomatoes, Grande Cheese, New York Brick Ovens and Hobart Mixers will be in attendance. Then you have your pizza making contestants from around the world competing in spinning, stretching, tossing and making pizza in daily contests. If your shopping you can find ingredients, distributors, computer systems, signs and everything in between.
Lucky contest winners get the big check, acknowledgement from the pizza world and most important to future success: that priceless amount of press both locally and internationally.

Thermal Mass, Revolving Brick Ovens and Fast Casual Pizza

What does thermal mass have to do with making brick oven pizza? Well, let's start with the definition:

Thermal mass is a concept in building design that describes how the mass of the building provides "inertia" against temperature fluctuations, sometimes known as the thermal flywheel effect.[1] For example, when outside temperatures are fluctuating throughout the day, a large thermal mass within the insulated portion of a house can serve to "flatten out" the daily temperature fluctuations, since the thermal mass will absorb thermal energy when the surroundings are higher in temperature than the mass, and give thermal energy back when the surroundings are cooler, without reaching thermal equilibrium. This is distinct from a material's insulative value, which reduces a building's thermal conductivity, allowing it to be heated or cooled relatively separate from the outside, or even just retain the occupants' thermal energy longer.

So when you have a brick oven, such as The New York Brick Oven Company's revolving brick oven, that is dense and thick(several thousand pounds) you have a higher thermal mass than the routine pizza ovens which translates to having consistently cooked pizza and a more energy efficient design. Having a thick revolving deck aslo uses thermal mass to hold oven heat and cook evenly without hot and cold spots due to the continuous rotation. This was proven out in real world trials at the Iconic Goodfella's Brick Oven Pizza of New York when they replaced one of their fast casual pizza concept's 8 ft. interior surface standard brick ovens with a New York Brick Oven Inferno Series revolving brick ovens. This one change made for more consistent and faster production allowing them to realize about a $40,000 a year reduction in labor. The labor saving came from no longer needing to use the second 5 ft. standard oven for the rush and reducing the number of employees during non- peak hours with the revolving brick oven. Not to mention less fuel with operating a single oven as opposed to two ovens.

Bad Pizza?

Well if your not using a revolving brick oven I can give you a scenario:
It's Friday night and you have a line out the door, deliveries off the hook and you are short staffed. You have an a guy working your oven who is not your best. He miss calculates moving a pizza and one burns. Goodfella's Brick Oven Pizza Celebrates 21 Years of Service

Who knew those crazy Cosentino boys would still be in the pizza game after all these years, especially after opening in the countries highest Italian American populated area of Staten Island New York. The only goal of the time was just making a good pizza. They started off with the first brick oven in the borough and a dream of working together as a family. Fresh hand made ingredients like oven roasted peppers and fresh mozzarella set them apart in what may have been the first Fast Casual Gourmet Pizza place, with lines out the door daily and people coming from all over the world to try their trend setting Vodka Pie creation which soon became a national fad and is now a staple on menus across the country. The secret was really caring about the customers and making sure each pizza was cooked to perfection even though the constant demand made it hard to be the fastest at times. "We are doing the best we can, this  isn't Mcdonalds" could be heard from the staff on a Friday night even with 2 brick ovens going full force. "The customers are the unsung heroes, they were always understanding and supportive and spread the word like wild fire knowing their recommendation would always be appreciated by friends and family trying the pizza for the first time. Many have become close friends over the years celebrating important events from engagements, weddings, births, baptisms, first days of school and then college to starting the whole cycle again with the new generation. It's been one of the most rewarding experiences of my life" said Marc Cosentino in reflection. "Then there is the hundreds of incredible employees over the years who have contributed tremendously to making Goodfella's the place it is" said Scot Cosentino. "We have had successful chefs, managers, artists, actors, doctors, police officers, soldiers, teachers, writers, firemen, reverends,  and all kinds of business owners work with us on the way up and contribute to our success" said Andrew Scudera, who went from Eagle Scout/bus boy to working every position in the restaurant and ultimately becoming a partner and the Lead Instructor of the Goodfella's Pizza School of New York , not to mention his winning the World's Best Pizza Title. "One of the best compliments I ever received was in the wake of 911 when a regular customer came over to me smiled and thanked me for being here and said ' I don't know why but I stop by here every night on my way home from Manhattan and it just makes me feel better' said Scot thinking about the past 21 years. Major Crisis Enveloping the Mayor of New York City

Mayor deBlasio has only been on the job a few days and has already gotten himself caught in an international scandal. While visiting the Staten Island favorite Goodfella's Brick Oven Pizza to show his support and commitment to what has been previously known as the "Forgotten Borough" he made a pizza eating error of magnitude. The Mayor inadvertently reached for a fork, yes I said "fork". To those of you not from New York this is somthing on the order of putting ketchup on a hot dog or mayonnaise on on pastrami sandwich. To give the mayor respect he did switch over to the hand eating method once it was brought to his attention. Marc Cosentino of the New York Brick Oven Company company was on hand for the pizza making along with his brother Scot who were proud to use their Inferno revolving deck brick oven to prepare the pies being made by Andrew Scudera who won the 2012 International pizza title. Cosentino a former sergeant of the NYPD put his experience to use and realized the fork in question may be evidence of the crime so he prepared an evidence bag and secured the crime scene.

"I try to keep up with training even if it's only on TV or in the Movies" said Cosentino. The fork is currently enjoying it's own celebrity on display to the public at the Original Goodfella's on Hylan Boulevard in Staten Island for safe keeping till the new police commissioner Bill  Bratton  has had the opportunity to inspect it. From there it will most likely be auctioned off for a local Staten Island charity. Happy pizza.

Press Release: Mayor DeBlasio and the Controversial Pizza "Fork" at Goodfella" Brick Oven Pizza

The new Mayor bit off more than he could chew with local Italians at the World Famous Goodfella's Brick Oven Pizza in Staten Island. Many regulars looked on in horror as the Mayor initially used a knife and fork to eat his Smoking Goodfella pie. "He was just using good-manners but soon realized he was friends and pizza experts so he quickly dropped the formality and folded his pizza in half as any good New Yorker would do" said Scot Cosentino the founder of both Goodfella's Brick Oven Pizza and the New York Brick Oven Company. His partner Andy had this to say "since we make gourmet pizza and are a full service restaurant we're kind of used to people eating both ways. It's all good". Aside from the "pizzagate" issue co-founder Marc Cosentino said "Mr. Debalsio seemed like a genuine down to earth guy when he spoke to us and asked us local business owners from the The Forgotten Borough about the concerns we have since we are physically removed from the rest of the city by water. As former sergeant NYPD I think  it's a good start and I have already tagged the fork as "evidence". If your in Staten Island feel free to come by eat some incredible pizza and view the infamous fork.

The devil is in the detail, a popular saying that comes in handy when you run a business. In some industries the amount of competition is much larger than in others and the pizza industry is one of the big ones with fierce competition. For example there are 1163 pizza places in my home town of Brooklyn New York. How crazy would you have to be to compete in this market without paying attention to the basics let alone the details? What are the basics? First: How to make pizza? Second: What kind of oven should I use?
These questions are key but how about your type of pizza, your location, decor, promotion, marketing? Now we get into the details. Welcome to Pizza Expo 2014


Well this is it, on March 24th-27th 2014, the biggest show in the Pizza Industry takes place at the Vegas Convention center in Nevada. This show is the whose who of the multi-billion dollar pizza world. There will be the World's Best Pizza Contest with 3 time Champions Goodfella's Brick Oven Pizza of Staten Island New York defending their title. Guest speakers will be conducting seminars on various aspects of the business from making dough, franchising and marketing to hiring and management skills.  All the while expert chefs will be busy with all types of food demonstrations, lessons and samples. Imagine close to 10,000 pizza people all in the same venue over the course of a few days with a buzz that only pizza can create going on. Vendors selling pizza ovens, flour, cheese and pepperoni will be displaying their wares along with the latest concepts in fast casual pizza and even Pizza School for the new guys or those that may want to expand their abilities. A fantastic time for all in a place where "What happens in Vegas, stays in Vegas" as the saying goes so come on out and don't forget to visit the Goodfella's at booth number 231 and pay your "respect". It is the year of the Pizza according to MTV

As evidenced by a recent article by MTV proclaiming "Why Pizza Is Totally having a moment right now" you can see that the media is finally catching on. Those of us in the industry have known for years that the lowly pizza is coming of age. From the cover of GQ to Fortune 500 and even articles on Goodfella's Pizza in the Wall Street Journal the word is getting out that pizza is big business. When pop stars like Beyonce'
are wearing pizza clothing and Lady Ga Ga has a Pizza made in her own image
it's getting wild. 350 slices per second, billions of dollars in sales, gourmet pizza places popping up in every city around the world and pizza schools showing would be pizziolos how to make a "Better Pie" it's no wonder that even MTV is getting on the pizza band wagon. One of the big reasons for the outburst of interest is the brick oven and the difference it makes in quality and taste of pizza. A new trend that is emerging for the fast casual pizza market is the Revolving Deck Brick Oven which makes consistency and speed a par for the course. Pizza Equipment-The Brick Oven is the Show

Any business requires an investment and unless your a big wall street firm or the Federal Reserve and have the ability to just "print" money, your probably on a budget and are looking to save money in any and all areas as you build. That being said, we continually get customers calling for a Revolving Brick Oven as a last minute item. Having cooked pizza in a conventional Brick oven for 20 years I was skeptical at first but the past couple of years are an eye opener. It is human nature to "get used to" just about any circumstance we are in and the fear of change is always powerful. When I first heard of the revolving deck oven I dismissed it as a new fad but on examination it made sense especially with the constant heat provided by gas, wood and an industry first-an electric heating element below the cooking surface.
