Do surveys if you want to win in Pizza!

It’s a lot simpler than you think and an increbly effective tool. A simple 3 question survey printed on a 3 X 5 can get you more in control of your current business or direct you in starting up. Here are some sample questions:

questions

What is your favorite part of dining out?

What part of your meal did you like the least? Why

What type of music do you prefer while eating?

Is there something we can imptove on?

What is your favorite beer?

What is your favorite soft drink?

How was your service?

Was your table clean when your were seated?

Were greeted when you came in?

Please rate the cleanliness of the restaurant.

Was your waiter attentive?

Please rate the presentation of the staff.

What can we improve upon?

These question can be directed at just about any aspect of your business, the key is to do a lot of surveys, then go over them and look at the answers to each question and then act on the majority answer to each question. Example

54 people prefer Pespi 20 people Coke 2 Dr. pepper 24 Mountain dew

If you are only serving Coke and orange-you may want to look at serving Pepsi.

If you asked a question about your favorite dessert and the majority said apple pie and you only have chesse cake-you may want add Apple pie and sse what happens.

You can add the time of day on the survey and see if there are certain shifts doing poorly or better for product and or service.

Tou can look at the most common words used in your answers and use those words in your promotions to have more in common with your customers.

Or you could take a look at all your sale catagories and see what items are bought the most, what topping are most popular, what salads are bought most and use those top sellers in sales promotions and specials since those are already proven winners.

Ther is an unlimited tool here for you to use to guide and create a better and more profitable reataurant.

Start with 3 simple question and see the results-then it’s up to you to act. You can also add an online survey or complaints dept. The more you encourage your customers to communicate, the more information you will have. I hope this helps you improve on what you have and take it to the next level. Feel free to contact me with any questions on how to aply this-best wihes. Marc Cosentino

Key Reasons for Purchasing The New York Brick Oven Company’s

                                      Revolving/Rotating Brick Ovens

  Much Higher Volume & Throughput

    • A rotating deck eliminates the need for the pizzaiolo to constantly turn pies by hand. The oven does the turning automatically and uniformly.
    • One skilled operator can easily manage 100–200+ pizzas per hour (depending on oven size and temperature) instead of the 50–80 pizzas/hour typical with a skilled pizzaiolo in a static deck oven.
    • Essential for high-volume pizzerias, stadiums, large chains, or any place that needs to push out pies quickly during peak hours.
  1. Labor Savings & Reduced Skill Requirement
    • You don’t need a highly trained, high-salary Neapolitan pizzaiolo who can perfectly rotate and monitor multiple pies at once.
    • Lower-skilled staff can load and unload pizzas with minimal training, and the rotation ensures even cooking. This dramatically cuts labor costs and staffing headaches.
  2. Consistent Results Every Time
    • The deck rotates at a constant speed, so every pizza gets exactly the same exposure to the flame and hot spots.
    • Reduces burnt or undercooked pies caused by human error—critical when you have multiple locations or want brand consistency.
  3. Even Heat Distribution & Faster Recovery
    • Many rotating brick ovens are designed with the flame and heat source optimized for a moving deck (often gas-assisted or hybrid wood/gas).
    • They recover temperature faster between pies because the deck is constantly moving fresh mass under the flame, allowing tighter pie spacing and higher output.
  4. Space Efficiency in Some Cases
    • Although the ovens themselves are large, the rotating deck means you only need one landing zone for loading/unloading instead of managing multiple static decks or doors. In very high-volume operations, this can save floor space.
  5. Marketing & Theater (in some concepts)
    • Customers love watching the pies spin around a live flame. It creates visual excitement similar to a traditional open-flame oven but with higher output.

Typical Users of Revolving Brick Ovens

  • Fast-casual chains (e.g., Blaze Pizza, MOD, &pizza, many European chains)
  • Stadiums, airports, and large entertainment venues
  • High-volume independent pizzerias (200–500+ seats)
  • Hotel and casino buffets
  • Operations that want authentic brick-oven taste but can’t justify the labor cost of traditional artisanal staffing
  • In short: Restaurant owners buy revolving brick ovens when volume, consistency, and labor cost control are more important than absolute artisanal tradition—and in today’s labor market, that’s most growing or high-traffic operations.

Good help? Workforce problems?

Seems that no matter who I speak with the reataurant industry, the  top complaint is-"Can't find good help these days". This complaint goes across the country from coast to coast. Several theories have been given as to why they have the "workforce blues" ranging from bad upbringing to Melenials, Democrats, school system, victim mentality, government should take care of me, the world owes me a living and some you could probably name yourself. What is the answer? Training, when you find an employee that shows some initiative do all you can to make sure he knows exactly what is expected of him. Make sure he know exactly how to do what is expected of him. Ackowledge him when he does it right and retrain him without any ridicule, chastising or punishment until he A-Knows exactly what is expected of him. B-can do exactly what is expected of him and C-Does what is expected of him on a routine basis. Frustration can be expected but it can worked through till you have a competent and happy employee.

September 11th

The tragic event is etched in my my mind as it is with too many people in NY, around the country and around the world. The horror of it won't go away but what I choose to remember is the love, courage, and compassion. I was a young Sgt. in the  NYPD that responded to the first attack in 1993 and then as a volunteer recovering the remains of the victims after the second attack.  The number of men and women that responded to help was overwhelming. It goes without saying what the first responders did was heroic but they were not alone in their efforts. There were sanitation workers, Red Cross volunteers, ironworkers, volunteer ministers from the Church of Scientology, tow truck drivers, office workers, and store owners, and average men and women all there doing what they could, from clearing wreckage to applying first aid to feeding and comforting the first responders. Civilians helping people escape ground zero, helping them find there way back home without public transportation, or just giving their fellow Americans a shoulder to cry on. This went on for months and all the unsung heroes( I was reminded of all this from this article in PMQ magazine about Goodfellas feeding the police officers who were sifting through the rubble for human remains day after day for months.) People from all walks of life were there just doing what they could to help from there own ability is recognized and appreciated. From the young lady handing out water to the elderly veteran that donated work gloves to the responders. The school kids from all over the world that sent letters of support, the men and women that fought to make sure the ill were taken care of and their families cared for after their loss. The priests and doctors that had to administer to the survivors still and the list goes on and even on down to the smallest act of kindness that was displayed - like waving and smiling or letting a vehicle go without contest or traffic dispute. A simple bow of the head to those working "the pile" meant a lot.  I want to acknowledge all of you that rose to the occasion and showed the best of humanity and represented mankind for what it truly is. Thank you all, my admiration and respect are yours, you earned it.  Marc Cosentino

Memorial Day. To those who gave all for freedom, we thank you.

Traditionally this weekend kicks off the summer season with parties and barbecues.

But for too many, it is a horrible reminder of pain and loss. The reality of the sacrifice made by many Americans and their families is very severe.
Every American Serviceman signs that contract knowing he may have  to pay the ultimate price but always hoping it never has to come that. It may be hard to understand for some even they though they enjoy the benefits provided  by those brave men and women on a daily basis.  Many people do not support our military but it would be a sad existence without them. You may not be a soldier or agree with the way our country is being run but courtesy and respect are always appreciated for a job well done. One thing I can do is thank you for your sacrifice and thank your to your family for supporting you. And when I see a veteran and thank him or her for his service I always see that pride and appreciation for the acknowledgement. I hope you too can do the same when you encounter one of our soldiers because it does matter to them and to all of us as  Americans.  Enjoy the hell out of this weekend but never forget the cost. God Bless America my friends!

Brick ovens and you

Thinking of getting your own brick oven? Well, there are definite benefits to adding one to your business or replacing a conventional oven with one. To start with there is the aesthetic aspect of the revolving brick oven and showcasing the flames in it. There is nothing quite like having the dancing flames which can be seen by the customer. The outside of the oven can be decorated in any fashion that you choose to give your business that personal touch to match your motif. With that personal touch and flame going, the next part of the equation is the wood. There is nothing like the smell of fresh burning wood in the oven to pique one's sense of hunger.

Ok, now that you have decided to own a brick oven what can you do with it? Well the obvious place to start with is pizza. Why start with pizza, because it simple and a universal food. Have you ever heard of anyone that did not like pizza? Well if you do-stay away from them :) The revolving brick oven like the ones NY Brick Oven Co  makes will make your life and pizza making a pleasure. They take the skilled labor out of working a brick oven, they make perfect pizza every-time because you don't have to continuously move and rotate the pizza but more importantly, you don't have to monitor the burning wood since it is gas assisted and maintains the perfect baking temperature for your application. Not only that but it gives the pizza man the ability to make pizza, place it in the oven and go back to making pizza while it bakes-something you can't do with a conventional oven because you have to rote and spin the pizza to avoid burning it and cooking it evenly. Not only that but those guys at NY Brick Oven Co. set a world record at pizza expo making 200 pies in 51 minutes in one oven! When you are ready to make a move, get a life saver for pizza men-the revolving brick oven from NY Brick Oven Co.

How to make the best Margarita Pizza - Goodfellas Hylan NY Style, Brick ...

Sometimes the simple yet basic things are best, like a comfortable pair of shoes, an easy chair and a warm fire. Pizza is already a comfort food, universally accepted and craved by one and all so why complicate it. The basic ingredients of flour, mozzarella, tomato, and basil representing the colors of the Italian flag were presented by Rafael Esposito in honor of Queen Margharita and her Husband King Umberto visiting his home town of Naples in 1889. Still the Margharita or plain pizza is the top seller across America and truly the best way to tell if a pizza maker is on top of his game. There is no mistaking freshly prepared quality ingredients when there are no exotic flavors overpowering or masking the basic ingredients. If you can make a quality Margharita the rest is easy so get busy.
